Adobo Pork Recipe ( With banana )

I've never had any Filipino food in my life until I went to a X'mas party that hosted by a Filipino friend a couple years ago. Its not like that I dislike Filipino food but it just seems Filipino food is never a popular cuisine so it never enter my mind to try it. Anyway, so my friend prepared a huge amount of Western and Filipino food on that day, one of the dish was like a pork stew, meat was tender and has quite strong flavor. My bf and I were both enjoying it, so that's how I learnt about Adobo.

Hence, I started searching for adobo recipes. Normally the recipes dont included banana, however one day I saw Filipino banana in a local Filipino shop, adobo always has a hints of sourness due to vinegar, i thought it might be a good idea to add a little bit of sweetness into the dish and also make the sauce thicker.

It is a very simple recipe, all the ingredients you need are below, you can decide to add banana or not according to your taste

Pork Belly / Chicken .... approx 2lbs

Bay leaves .... 4pcs

Filipino banana ( any not too sweet banana ) .... 3pcs

Sliced Garlic .....4 Cloves

Brown Sugar ... 1 Tbs

Rice Vinegar .....100ml

Light Soy Sauce .....100ml

Water .... 300ml

Olive oil .... 2 Tbs

Directions

1. Chop the pork belly into bigger dices

2. Chop the banana into thick slice, Filipino banana is smaller,shorter and harder than the regular ones, it is also less sweet

3. Heat oil in a cast-iron pot until the oil starts to smoke, sear pork 2-3mins each side

4. Add garlic, let it cook until the pork is seared

4. Add vinegar, light soy sauce, water, bay leaves, brown sugar, black pepper and banana

5. Bring it to boil, then reduce to a bare simmer and cook for 1 hour, covered. I prefer my pork very tender so I just let it cook for 1.5 - 2 hours (stir it from time to time to ensure it wont stick to the pot )

6. Bon appetit!! It goes really well with rice!
